Because they work better and are easier for non-technical users to run. Have you tried using WebRTC with more than a few users? It's a bad time

I've been using Galene to self-host Linux User Group meetings for the past few months. It is lightweight and works well with Raspberry Pi 3 for a small group. https://galene.org/
