There’s an old story about sausages: the very finely minced sausages like Frankfurters used to be the height of sophistication because of the sheer amount of time it took a person to get the meat that processed, and you wouldn’t use lower quality meat for something that expensive. As soon as industrial mincers became a thing people realised you could throw in the proverbial lips and anuses because the cost per unit dropped so much, and so sausages like salsiccia are now the expensive ones because you have a better chance of identifying the quality of the meat.
