Because you may not know enough to guide the book down a directed table of contents. As much you can scream at the LLM to include all the things you might have missed, it's just not good enough yet. The LLM can definitely write the book, but it needs expert guidance for something to be thorough and credible. This is also true for Q&A, you simply may not know what you need to ask about.
