My point isn’t that they are incorrect (calculations of the historical temperatures), but that they are not true (readings from the thermometers).

Data tampering? In science, you must accept new science coming your way, and update your assumptions and your models. Specially data from medieval times since it was mostly guess work based on indirect records, because there are no temperature records. Specially no records of global temperature.
