As someone who lives in Japan happy to say that you’re wrong and sushi places both cheap and expensive serve salmon all the time, and Japanese people order them all the time.

Some people love it, some don't. It is loved, just not universally.

Aside, but like most other foods old or new it will have its fair share of TV airtime with celebrities making loud faces about how delicious it is ;)

Or what distinction do you make between "it is enjoyed" and "it is loved"?

And if you go to 回転寿司 it's always topped with something else because nobody wants plain salmon.

As someone who lives in Japan, it may well be available but it is not LOVED by Japanese people. I'm always amazed how many of my Japanese friends don't eat Salmon sushi.
