Do you need mesh since you can't run wires?

I guess I could, but not having to sounds easier.

Wires exhibit predictable behavior.
If you can, run wires. More than you need, in case the cost of having twice as many cables as necessary is lower than lying even one additional cable to the farthest-away location.
And if you can, go for Cat.7, which allows higher speeds should those be necessary.
And don't neglect a room that could need networking in case of one more/less inhabitant is living there in the future.
