Thank you. I've been working in bakeries since I was 5. My earliest memory is "greasing" loaf pans for pullman loaves. For 25+ years I've been cooking, making bread, and more recently is when I've become more interested in the scientific aspect. I work for an extremely reputable and well known hospitality company so I think I come with some credibility but I understand what you mean. It's a risk, will take me out of my comfort zone! My dad has owned a bakery for 25+ years, and has decided to sell, and I am interested in trying to buy the land ($1.5m) and revamp it into a multi-concept bakery/cafe/bar/restaurant. I've spent years working in food, restaurant, operations, reading bread science and bread books, and am ready to make the leap. How do folks find funding for a bakery concept?
