Is anybody using Flex for embedded systems? Any thoughts on that?

While not a traditional embedded system, I built a HTML/CSS/JS/Flex app that lives on a touch screen kiosk inside a museum.

Did you encounter any problems while using Flex? Was it stable? Did it need to be restarted often, etc.?

Yes. There have been past projects (if memory serves, Jaguar and BMWs, a yacht, Chumby, etc), but most of the action is now occurring in the next-generation cross-device Player, at openscreenproject.org.
