Guake, which provides a Quake like terminal and quick and easy access to a terminal using the F12 key. Plus, it supports anti-aliased fonts and multiple tabs. http://trac.guake-terminal.org/

On my Mac at work I use Visor. http://docs.blacktree.com/visor/visor

And for some reason I can't get visor to work on Snow Leopard ... grrr.
