(1) I already talk about plenty without getting targeted ads

(2) Android is open source and I'm familiar with the core codebase as part of my job

(3) Even if I get an ad after talking about a product, that isn't proof (hence my confirmation bias comment...)

I'd assume that this listening functionality only comes with certain apps, that's certainly the case for ultrasonic tracking apps [0]. Probably you have just managed to avoid installing such apps.
