You could always toss Cribl Stream in between this as the pipeline. It's purpose built for these use cases. Also going to be a lot easier to manage than Kafka.

Try quitting Slack and just running this from the console.
It worked for me:
export SLACK_DEVELOPER_MENU=true
open /Applications/Slack.app
